One Pot Wonder


A few weeks ago, while scrolling my news feed on Facebook, I came across a recipe link for a one pot pasta. It looked super easy and delicious so I added it to the must try list. Of course I had to put my own spin on it. Here’s the link to the original recipe

My twist took this to an omnivore level that the family loved so much, I have since made this 2 more times with it being on the weekly menu each week. Of course each batch changes as I just use what veggies I have that are starting to get close to becoming chicken snacks. So here’s the veggie laden version that I really enjoyed the most.

One Pot Wonder Pasta

1 pound hot Italian Sausage, casings removed
12 oz. pasta, any variety of your choosing, I like rainbow raddiatore
2 – 15oz cans diced tomatoes, Italian recipe or any that look tasty to you
1/2 large sweet onion chopped
4 cloves garlic, minced
1 teaspoon oregano
1 teaspoon marjoram
a big handful of fresh basil leaves, roughly chopped
1 cup diced red bell pepper
3/4 cup diced carrots
2-3 cups kale, ribs removed, roughly chopped
1 small zucchini or other summer squash, diced
1 package sliced mushrooms
4 cups vegetable broth*

In a large pot cook the sausage over medium-high heat, using a wooden spoon, break up the sausage as it cooks.

Chop up all your veggies, open your cans of tomatoes…

And dump it all into the pot, along with the dried spices, pasta and some salt and pepper.

Stir to combine, cover the pot and bring to a boil. Reduce to a gentle simmer and keep covered. Cook for about 10-15 minutes, depending on the type of pasta you chose, stirring every 2 minutes. Cook until most of the liquid is absorbed. Leave as much liquid as you like, I don’t like it soupy so I tend to cook a bit longer, this makes a nice thick stew like consistency. Check and adjust your seasoning with salt and pepper. Serve with a sprinkling of parmesan cheese
