Chicken Salad


Sometimes the Hubs needs a break from meat & cheese sandwiches or leftovers in his lunch.  That’s when I whip up a batch of my chicken salad.  This is ridiculously easy and insanely delicious. I don’t have exact measurements, but I think you can handle it.  So here goes…


Start with 2 large cans of white meat chicken, drained (Look close, it’s in there, under everything else)

Chop up 3 or 4 stalks of celery and 1/4 of a large red onion

Halve a big handful or so of crunchy red grapes

Add a big dollop of mayo and a very healthy amount of black pepper



Stir it all up.  Toast up your favorite “brown” bread.  I love a good loaf of Dave’s Killer Blue’s Bread

Apply a generous scoop of the chicken salad to your toasted bread, you’ll want to be sure to mush it down a little bit to keep it from all falling out when you pick it up.  Want to go lower carb?  Plop a scoop atop some fresh greens.  Want a little more crunch, add some chopped pecans (I prefer it with the nuts but the Hubs is not a fan).  Enjoy
